Do I have to cancel my old hosting contract immediately?

No, only cancel once the site has been running without errors on the new server for a few days. That way the old state remains as a fallback.

Can the Joomla version also be updated during the move?

That is possible and often sensible, but it should be planned as a separate step. That way, if problems occur, it is clear whether they come from the move or from the update.
